Responsible for the tasks that are assigned by the Steward Supervisor and Executive Steward. Coordinate materials and equipment to maintain cleanliness/sanitation of workstation and communicate problems/concerns to supervisor or kitchen management. This position requires considerable physical activity on a continuous basis throughout the shift including working in confined spaces and awkward positions, requiring standing, crouching, kneeling, stooping and reaching overhead. Ability to comprehend product labeling instructions to enable the safe application of products. Maintain inventory of supplies needed to perform job function. Performs cleaning of kitchen equipment, including stoves, broilers, ovens, fryers, steam tables, and any other kitchen equipment assigned. Performs cleaning of floor mats and kitchen floors and walls on a nightly basis. As needed, performs deep cleaning/steam cleaning of these items. Moves, organizes, stores kitchen equipment in assigned locations and in an organized manner. Cleans, de-limes, sanitizes and performs appropriate preventive cleaning and maintenance measures on dish machines. Wash dish ware, flatware, pots and pans and other kitchen/service utensils as required/assigned. Performs special cleaning projects in other areas of the operation including bars, dining areas, and any other areas as assigned by leadership. Insure “Wet Floor” signs and other markers are used. Make sure kitchen workers have and use the proper equipment necessary for the job (gloves, goggles, chemicals, etc.). Ensure that all equipment functions properly. Maintain the levels and standards of cleanliness and safety set by Cactus Petes Casino and the Health Department.
