The Sous Chef is responsible for creating and executing menu recipes defined by the Ole Red brand for the Ole Red Gatlinburg location. This role involves overseeing staff and details related to the production and execution of menu items, managing food production and presentation, and leading the culinary team to achieve exceptional standards of excellence and exceed guest experience expectations. The Sous Chef will uphold menu and recipes to Ole Red standards, foster a strong team environment, prepare items for catering and banquet events, and select, train, and develop the culinary team. This position is also responsible for meeting budgeted cost of goods and culinary labor costs, maintaining proper purchasing and inventory levels, processing invoices, training the culinary team on equipment maintenance and safety, and ensuring compliance with all food- and beverage-related regulations and company policies. The Sous Chef must be able to make decisions in the absence of the Executive Chef and perform other duties as assigned.
