About The Position

Flecha Cantina is a vibrant, upscale Mexican restaurant dedicated to delivering exceptional dining experiences. We are seeking a motivated Sous Chef to join our culinary leadership team! You will be assisting the Culinary Manager in maintaining the operation of the kitchen, from running service, food prep, and quality control for inventory and physical maintenance. You are a natural leader with previous supervisory experience as well as experience with high-volume cooking.

Requirements

  • Some college or specialized training in food and beverage management with a minimum of 2 years in a relevant role, with proven experience in staff supervision.
  • Advanced knowledge of food service industry regulations and safety standards.
  • Strong organizational and time-management skills, with a proven ability to maintain efficiency in both hot and cold line production.
  • Proficiency in the safe and effective operation of all kitchen hand tools and industrial food preparation equipment.
  • Valid ServeSafe or Food Handler’s certification (or ability to obtain within 30 days of hire)

Responsibilities

  • Oversee the preparation and cooking of all menu items, ensuring consistent quality and sophisticated presentation for daily service, special events, and private functions.
  • Direct daily staffing operations, including strategic shift planning, work delegation, and the mentorship of team members through defined performance and professional development goals.
  • Conduct training to ensure all staff adhere to federal, state, and local health, safety, and labor regulations.
  • Actively monitor and manage kitchen budgets, exercising rigorous control over food costs, supply procurement, and labor expenditures to optimize profitability.
  • Conduct meticulous inspections of raw ingredients and finished products to ensure every dish aligns with our brand’s commitment to excellence and guest satisfaction.
  • Maintain readiness to perform all kitchen management and line-level duties as required to support seamless service and bridge operational gaps.
  • Maintain strict security and organization of all food, beverages, and equipment; implement efficient replenishment strategies to ensure product availability while minimizing waste.
  • Perform other duties as assigned by ownership or regional management.
