About The Position

The Smoke House Operator is responsible for hauling raw or cooked racked product throughout the plant. The role involves weighing and loading product into and out of smokehouses, steam boxes, and chills; moving product between these areas; and ensuring racks are properly spaced and positioned. The operator marks product identification and rack tags with house numbers and day-code letters and enters product data—including scans, weights, destinations, and rack numbers—into computer and handheld systems. The operator pushes or pulls product racks weighing up to 1,000 pounds between staging areas, smokehouses, and chills. Garner and air chills are loaded immediately after product is shown and weighed. The role includes operating brine, garner, and air chills; documenting product temperatures to Quality Control specifications; and taking salometer readings. The operator also performs general housekeeping and cleaning throughout the smokehouse department, cleans and stores equipment, takes thermometers to the lab for calibration, and complies with chemical, safety, food safety, GMP, and SQF requirements. Additional duties include scanning or entering product film, boxes, casings, clips, and ingredients for daily product runs and changeovers; following computer formulations; accurately recording and reporting food safety or product information; operating powered stand-up, sit-down, and high-lift rack-moving tow motor equipment; performing all positions in job rotation as needed; and completing other work assigned by management.
