Under the supervision of the General Manager, fine dining Italian concept, the incumbent is primarily responsible for the concept and creation of the cocktail program in the property’s restaurants and bars, including menus, cost of sale, recipes and training. Incumbent is also responsible to manage bar and lounge areas, ensure a guest atmosphere that is pleasant, enjoyable and fun, ensure consistency of service through the implementation of policy and procedure, training and certification, recognition and discipline of all evening bar staff members. Responsible for safe and responsible service at all times in bar and lounge. Daily responsibilities include but are not limited to scheduling of team, facility maintenance, preparation for events and private parties, interviewing and hiring, holding team members accountable for job duties, opening and closing the venue, ensuring the health and safety standards are met.
