About The Position

Docent Steak is a high-end Japanese steakhouse in Dallas, Texas, dedicated to showcasing the mastery of Harwood steaks, sushi, and an expertly curated wine selection. The restaurant aims to immerse guests in the rich heritage of the Samurai with its museum-quality collection. The Server is responsible for the service of food and alcoholic beverages, soft drinks, and food in an efficient and professional manner, adhering to the standards and procedures set by the Harwood Hospitality Group training manual.

Requirements

  • Minimum of 3 years' experience, required.
  • High Volume, Luxury or Steakhouse experience, required.
  • TABC and Food Handlers certification.
  • Ability to be on your feet for extended periods of time.

  • Ensure that recipe cards, production schedules, plating guides, photographs are current and posted.
  • Responsible for profitable bar cost by accurate measurement of product.
  • Ensure that all Coolers/side stations are cleaned and stocked daily up to the Stock Par.

Responsibilities

  • Assist other servers in monitoring and coordinating the day-to-day operations of their section during each shift, ensuring all FOH SOPs (including HACCP) are followed and executed.
  • Prepare drinks in accordance with proper mix ratios and deliver them to guests.
  • Ensure spotless service is delivered to all guests, fulfilling their needs and expectations to the highest level of detail.
  • Maintain a current knowledge of bar inventory and mixed drink recipes.
  • Communicate effectively with the restaurant manager, servers, and host/hostess to ensure a seamless guest experience.
  • Engage guests with a pleasant greeting and take drink orders according to HHG bar service standards.
  • Mix ingredients to prepare cocktails and other drinks.
  • Check food before serving to ascertain appearance, temperature, and portion correctness.
  • Follow HHG food and beverage standards and procedures.
  • Fill out requisitions, par, and supply lists.
  • Perform all duties in a safe manner and monitor the actions of others.
  • Be pleasant, hospitable, and attentive to guests at all times.
  • Relay any guest complaints/comments to the Manager.
  • Maintain and clean the bar before, during, and after each shift.
  • Ensure timely and accurate entry of orders into the computer system and collection of payment.
  • Minimize waste and maintain controls to attain forecasted food and beverage costs.
  • Reconciliation of money and checks from servers/guests.
  • Ensure profitable bar cost through accurate measurement of product.
  • Perform correct cash out procedures for servers.
  • Send orders through a computer terminal.
  • Take physical inventory of specified food items for daily inventory.
  • Ensure menu items are prepared following recipes.
  • Ensure all food and drinks are rung up properly.
  • Follow proper procedures for ringing guest checks and cash collection.
  • Follow cash handling responsibilities as dictated by HHG policy.
  • Be fully responsible and accountable for an issued bank.
  • Collect money for food and beverage served.
  • Maintain and strictly abide by state sanitation/health regulations and HHG requirements.
  • Maintain proper storage procedures as specified by Health Department and restaurant requirements.
  • Instruct staff in the correct usage and care of all machinery, stressing safety.
  • Be available for any mandatory restaurant meeting or training.
  • Report immediately any major product defect or any major guest issue and take necessary corrective actions.
  • Ensure smooth communication with all direct reports and other Restaurant Managers/supervisors.
  • Keep current with trends in the restaurant industry.
  • Be neatly dressed and groomed, and behave and speak according to HHG standards of excellence.
  • Treat all associates with respect and consideration, regardless of their position or tasks.
