About The Position

The Merchant Room is a fine dining New American Brasserie led by two-time James Beard Award–winner Chef Gavin Kaysen. Inspired by the elegance of Old Florida, it offers a refined and elevated atmosphere with ocean-view terrace dining for breakfast, lunch, and dinner. Guests enjoy revolving signature inhouse, dry aged steaks, house made pastas, and dishes featuring the bounty of the Gulf Coast — all crafted with exceptional technique and warm, genuine hospitality.

Requirements

  • 2+ years of serving experience, preferably within a luxury hotel and/or high-end restaurant environment.
  • Working knowledge of Micros POS system is preferred.
  • Strong interpersonal and personal presentation skills are required.
  • Guest-focused mentality and understanding the importance of guest’s preferences.
  • Strong problem-solving, decision-making and conflict resolution skills.
  • The ideal candidate will have a confident, outgoing personality and a can-do approach to any request.
  • Position requires continuous standing for 8 or more hours a day and requires the ability to lift up to 50lbs.
  • Fluency in English is required for this location and this job requires applicants to have current work authorization in the in the United States.

Responsibilities

  • Create a wonderful dining experience by connecting with guests and maintaining an exceptional knowledge of food, wine, spirits, and mixed drinks, and information about menu items and preparation methods.
  • Communicate guest orders including any special needs or requests to the kitchen using the hotel’s point-of-sale system; check completed orders with the guest’s original order; anticipate guest needs, ascertain satisfaction, and offer suggestions.
  • Responsible for delivering and clearing guest food as well as assisting with any guest needs throughout service in a timely manner.
  • Upsell patrons on higher priced wine and food items to achieve the sales goals of the department.
  • Responsible for accurately closing guest checks and processing cash and credit card payments.
  • Provide quick and efficient service, while following state and city alcohol laws and adhering to Four Seasons standards of service and sequence of service.
  • Follow all health and safety regulations, restaurant standards, and daily side work.
  • Be present and ensure that professional, courteous, and efficient guest service is offered, where each guest is greeted promptly and courteously with eye contact and a smile.
