About The Position

This is a 6–9 month hands-on training program designed to build the skills, knowledge, and confidence needed to advance to Roasting Apprentice 2. You won’t just watch from the sidelines—you’ll learn by doing. We’re looking for someone who is ready to learn, willing to work hard, and excited to develop a specialized craft.

Requirements

  • Dependable, detail-oriented, and takes ownership of their work
  • Eager to learn and receptive to coaching and feedback
  • Can work independently while also being a strong teammate
  • Can stay organized and manage multiple tasks and priorities
  • Basic math and computer skills
  • Communicates clearly, both verbally and in writing
  • Takes safety, quality, and consistency seriously
  • Can become certified to operate a forklift
  • Comfortable working in a fast-paced production environment
  • Can work overtime and occasional weekends as needed
  • Can follow Dillanos' Good Manufacturing Practices (GMPs) and all safety requirements
  • Regularly walk, stand, bend, and climb stairs
  • Properly lift up to 75 lbs. unassisted and 152 lbs. with assistance
  • Work safely around production and roasting equipment
  • Work in a warehouse environment where temperature and humidity can vary with local weather conditions

Nice To Haves

  • Previous production or coffee roasting experience is a plus, but not required.

Responsibilities

  • Learn coffee roasting fundamentals and roasting theory
  • Operate 240k roaster, progressing from observation to supervised roasting and ultimately independent roasting
  • Learn roasting equipment identification and operation
  • Maintain batch logs, detailed roasting notes, and Cropster input
  • Perform green coffee off-loading and silo loading
  • Understand pre- and post-blending processes
  • Learn cupping protocols and coffee quality assessment
  • Operate MPE controls and batch transfers
  • Follow organic procedures
  • Perform daily, weekly, and quarterly roaster maintenance
  • Maintain Green Room protocols
  • Become certified to operate a forklift
  • Adhere to fire safety and emergency procedures
  • Independently roast designated coffees on our 240k roaster while meeting Dillanos' quality, safety, and production standards by the end of the 6–9 month program.
