About The Position

Marshall Yards Racing & Gaming is a newly constructed facility in a high-traffic area in Calvert City, Kentucky at the intersection of I-69 and I-24. The Property will feature nearly 240 state-of-the-art historical racing machines (“HRMs”), a sports bar and a retail sportsbook, simulcast wagering, and food and beverage offerings. The Prep Cook is responsible for prepping food items before shift safely, following menu specifications and standard recipes, to assist in serving guests.

Requirements

  • Reading and math skills for recipes and measurements.
  • Ability to read, write, speak, and understand Basic English to read recipes and communicate with other team members.
  • Maintaining interpersonal working relationships among all personnel.
  • Oral and written communication skills.
  • Able to interact with internal and external guests in a friendly/fast manner.
  • All internal and external guests must be treated in a manner to ensure complete satisfaction. Always strive to exceed our guests’ expectations.
  • Ability to work in a fast-paced environment.
  • Must be able to work an alternate schedule with a minimum of two (2) weeks’ notice.
  • High school diploma or equivalent.
  • Able to obtain and maintain a valid Kentucky gaming/racing license.

Nice To Haves

  • At least 1 year of experience in a professional kitchen area is preferred.
  • Food safe certification from a recognized authority (ServSafe certification, etc.) is preferred.

Responsibilities

  • Operate kitchen equipment, including slicer, steamer, deep fryer, ovens, broiler, grill, mixer, kettle, and griddles.
  • Coordinate with staff to prep items needed in a timely and effective manner.
  • Adhere to control procedures for food costs and quality.
  • Abide by all health codes and hand-washing guidelines.
  • Prepare all food items according to standard recipes and menu to ensure consistency of product to the guest.
  • Create compound sauces and derivatives of the mother sauces.
  • Clean all food preparation areas and kitchen equipment to ensure a healthy and clean environment for all Food and Beverage team members.
  • Other duties as assigned.
