About The Position

The Prep Cook is responsible for producing all food items listed on the daily prep sheet in accordance with Torchy’s standards and recipes. The role also includes preparing masa and tortillas, maintaining a clean and organized kitchen, and following food safety and HACCP practices.

Requirements

• Meet state and local Food Handler’s certification requirements; obtain certification by the first day or within the timeline required by the location.
• Be familiar with kitchen equipment including a fryer, char grill, flat top, stove, RoboCoupes, immersion blender, dicers, mandolin, and scales.
• Ability to lift at least 40 lbs.
• Basic knife safety skills.
• Basic communication and reading skills.
• Ability to multitask.
• Must be at least 18 years of age.

Responsibilities

• Produce food items listed on the prep sheet according to Torchy’s standards and the Taco Bible recipes.
• Maintain a clean, organized kitchen and walk-in, and detail kitchen equipment daily.
• Set up and break down the station, ensuring it is ready for the shift and clean afterward.
• Follow recipes accurately and uphold Torchy’s food standards.
• Practice food safety and HACCP techniques, including FIFO inventory management.
• Record pre- and post-weights, track recipe yields, and label, date, and fill pans correctly.
• Rotate products as needed and assist with other duties as requested by management.
• Produce masa and press corn tortillas using a tortilla press.
• Slack flour tortilla dough balls and properly book flour and corn tortillas.
• Cook tortillas on a flat top to the correct specifications.
