About The Position

Mason Street Grill in downtown Milwaukee is seeking a PM Prep Cook to support evening culinary operations. This role involves preparing ingredients and food items according to established recipes, quality standards, and production needs, ensuring the kitchen is stocked and ready for dinner service. The position emphasizes maintaining high standards of food quality, organization, cleanliness, sanitation, and food safety. The PM Prep Cook will also prepare and cook menu items, expedite orders, and ensure junior team members perform duties to standards. Mason Street Grill is known for its steak, hand-crafted cocktails, jazz music, and exceptional service, aiming to create memorable guest experiences.

Requirements

  • Previous cooking experience required
  • Sufficient manual dexterity of hand in order to use all kitchen equipment, i.e., knives, spoons, spatulas, tongs, slicers, etc.
  • Ability to lift, push, or pull weights up to 100 pounds.
  • Ability to stand for long periods, work in a confined space with high levels of noise and frequent interruptions and perform duties within extreme temperature ranges.
  • Ability to obtain any local, state or federal license or certification for sanitation, liquor service, or food service certification.

Nice To Haves

  • A minimum of 3 years in a similar position preferred.
  • Culinary or Apprenticeship program preferred.
  • High school diploma preferred.

Responsibilities

  • Prepare ingredients and food items according to established recipes, prep lists, production levels, and culinary standards.
  • Complete assigned daily prep tasks accurately and efficiently to ensure the kitchen is fully prepared for evening service.
  • Wash, peel, cut, chop, slice, portion, marinate, and otherwise prepare meats, seafood, vegetables, sauces, and other ingredients as assigned.
  • Follow established recipes, portion specifications, and presentation standards to maintain consistency and quality.
  • Properly label, date, store, rotate, and organize all prepared and received food products following FIFO procedures and food safety standards.
  • Maintain proper food temperatures and follow all sanitation, handling, and storage requirements.
  • Communicate with chefs, supervisors, and line cooks regarding prep levels, shortages, product quality, and additional production needs.
  • Maintain clean, organized, and properly stocked prep stations, coolers, storage areas, and workspaces throughout the shift.
  • Safely and properly operate knives, slicers, mixers, food processors, ovens, and other kitchen equipment required for assigned duties.
  • Minimize food waste through proper preparation, portioning, storage, and product utilization.
  • Assist the culinary team with additional preparation and production needs during busy periods, special events, VIP functions, and banquet operations as needed.
  • Follow all company policies, health department regulations, sanitation procedures, and workplace safety standards.
  • Promote teamwork, professionalism, accountability, and exceptional guest service.
