About The Position

Parla is a spot to celebrate New York-style pizza and Italian-inspired cocktails by the team behind The Smith. Taking its name from Italian to talk, Parla speaks to our New York City roots and our passion for simple Italian cooking. Both square and round pizzas are the anchor of the menu, along with pastas, veggies, and shareable plates by Executive Chef Brian Ellis. The bar specializes in espresso, wine, and cocktails using a curated selection of amari and vermouth. Whether catching up over an espresso in the morning, meeting up for a cocktail in the afternoon, or stopping in for a cheesy slice in the evening, Parla brings together the spirit of great conversation with the joy of pizza.

Requirements

  • Experience making pizza in a high-volume kitchen, preferably New York–style
  • Strong understanding of dough handling, fermentation, and baking techniques
  • Ability to hand-stretch dough quickly and consistently under pressure
  • Demonstrates strong judgment and accountability for food quality
  • Able to manage multiple orders and maintain timing during peak service
  • Works collaboratively and communicates effectively with the kitchen team
  • Ability to read and follow standardized recipes and procedures
  • Passion for food, hospitality, and continuous improvement

Responsibilities

  • Prepare and execute pizzas according to Parla’s recipes, specifications, and quality standards
  • Make New York–style round and square pizzas from scratch, including dough preparation, stretching, topping, and baking
  • Hand-stretch pizza dough efficiently and consistently to proper size and thickness
  • Manage the firing and timing of pizzas to ensure proper cook, structure, and presentation
  • Monitor ovens and adjust as needed to maintain consistent product quality
  • Coordinate with the kitchen team to ensure all food is prepared and sent out simultaneously
  • Exercise judgment on quality—recognizing when a pizza does not meet standards and correcting or refiring as needed
  • Set up, stock, and maintain a clean and organized station for service
  • Follow direction from the Chef de Cuisine and Sous Chefs with accuracy and urgency
  • Maintain food safety, sanitation, and proper food handling standards at all times
