About The Position

The Nutrition Services Director leads the coordination and direction of the Nutrition Services Department at Encompass Health. The role sets and implements policies and procedures guiding cafeteria management, food preparation, budgeting, purchasing, staff development, and safety practices. The Director oversees food and supply purchasing, receiving, and inventory; ensures safe food handling and regulatory compliance; coordinates patient meal and cafeteria production; and supports staffing and employee management.

Requirements

• Hold one of the following credentials: Registered Dietitian (RD/RDN) with the Commission on Dietetic Registration (CDR), Dietetic Technician, Registered (DTR/NDTR) with the CDR, Certified Dietary Manager (CDM) with the Certifying Board for Dietary Managers (CBDM), or executive chef.
• Have three to five years of healthcare clinical nutrition or executive chef experience.
• Have ten or more years of healthcare food service experience, or five or more years of healthcare management experience.
• Have thorough knowledge of nutrition and dietetics, administration, and hospital food service operations.
• Know H.A.C.C.P. guidelines.

• Graduate of a bachelor's degree program in Dietetics, Culinary Arts, or a related field.

Responsibilities

• Manage the departmental budget as it relates to the position.
• Perform and document purchasing, receiving, and inventory control of food and supplies.
• Maintain proper sanitation, temperature, and food-handling techniques to comply with regulations.
• Determine the quality, quantity, and portion size of food required and ensure proper food handling.
• Ensure adequate staffing and manage department employees.
• Coordinate production for patient meals and the cafeteria line.
• Develop the cafeteria menu as needed.
• Purchase food and assist with and assign duties for special needs or special occasions.
