About The Position

We are seeking a Captain to join our Nobu Manalapan team. As a key member of the Eau Resort & Spa team, you will play an essential role in delivering exceptional service to our guests, upholding the standards of our Forbes Five-Star resort. This role is a P.M. position, and all candidates must be able to work weekends, holidays, and nights. This role is designated for our dining outlet, Nobu Manalapan.

Requirements

  • Strong leadership qualities.
  • Minimum of 18 years of age to serve alcoholic beverages.
  • Minimum of 2 years serving experience in a fine dining food and beverage establishment.
  • Food Handling Certificate.
  • Advanced food and beverage knowledge.
  • Ability to problem solve, troubleshoot, effectively prioritize work and assignments, and accurately meet deadlines.
  • Ability to understand guests' service needs.
  • Ability to thrive during very high levels of business.
  • Ability to be well organized, maintain concentration and think clearly when providing service to guests within any given period of time.
  • Ability to focus attention on details.
  • Ability to work outdoors for extended periods of time in extreme temperatures.
  • Ability to endure abundant physical movements throughout the work areas.

Responsibilities

  • Supervise staff in the food and beverage department.
  • Cross-utilize in other food and beverage outlets as necessary.
  • Train and motivate staff to ensure the highest standard of service and presentation.
  • Provide lateral service when needed.
  • Perform server duties, including taking food and beverage orders.
  • Retrieve and serve alcoholic/non-alcoholic beverages and food orders to guests.
  • Collect payments.
  • Assist in the daily cleanliness of the restaurant area.
  • Drive Forbes standards and exemplify the values and beliefs of Eau Resort & Spa.
  • Problem solve, troubleshoot, effectively prioritize work and assignments, and accurately meet deadlines.
  • Work closely with staff to ensure guests have extraordinary experiences.
  • Assist in the training, mentoring, supervision and motivation of team.
  • Assist in hiring, coaching, disciplining, counseling, and conducting performance reviews.
  • Enforce that cash management systems are set up properly.
  • Manage cost controls and understand P&L compliance.
  • Suggestively sell restaurant menu items, beverages and wines.
  • Access and input information into Micros system.
  • Maintain good coordination while serving orders quickly.
  • Work outdoors for extended periods of time in extreme temperatures.
  • Perform job functions with minimal supervision.
  • Work cohesively with co-workers as part of a team.
