About The Position

This position is responsible for producing quality food products daily while maintaining high standards and a strong work ethic. The Line Cook will season and cook food according to recipes or personal judgment and experience, regulate oven temperatures, and ensure proper food presentation for maximum appeal and freshness. They will also maintain production knowledge, attention to detail with taste and quality, and produce products in a cost-effective and hygienic manner. This role assists Lead Line Cooks, strives to improve operating procedures, and ensures proper labeling and dating of products for rotation, safekeeping, and sanitation. The Line Cook is responsible for superior food quality, correcting any irregularities, and ensuring kitchen equipment is properly maintained. They must work within sanitation standards and comply with all relevant regulations, while also contributing to a clean and organized kitchen environment. Creating and maintaining a positive work environment, promoting positive team member relations, and reporting issues to appropriate personnel are also key aspects of this role. Other duties may be assigned.

Requirements

  • Ability to obtain a Class III B gaming license.
  • Two (2) year certificate from an accredited culinary program or minimum 2 years’ experience in a commercial kitchen required.
  • Valid WA State Health Card/Food Handler permit required.
  • Knowledge of kitchen equipment.
  • Knowledge of all applicable food sanitation regulations.
  • Knowledge of health & safety standards, and safety regulations as required.
  • Ability to read and understand recipes, food abbreviations, weights, and preparation techniques.
  • Ability to multi-task in a fast-paced and high-pressure environment.
  • Ability to read and understand information and ideas presented in writing.
  • Ability to follow procedures and take directions.
  • Ability to always maintain a professional appearance and demeanor.
  • Skilled at handling kitchen utensils including but not limited to knives.
  • Skilled in basic math; demonstrate ability to understand, calculate and follow recipe measurements and proportions.
  • Read, write, and speak English fluently.

Responsibilities

  • Produce product daily while maintaining quality standards and strong work ethic.
  • Season and cook food according to recipes or personal judgment and experience.
  • Weigh, measure, and mix ingredients according to recipes or personal judgment, using various kitchen utensils and equipment.
  • Regulate temperature of ovens, broilers, grills, and roasters.
  • Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
  • Ensure proper presentation to provide maximum appeal and freshness.
  • Maintain production knowledge and attention to detail with taste and quality.
  • Produce products in a cost effective and hygienic manner.
  • Assist Lead Line Cooks in a support role.
  • Constantly strive to improve operating procedures.
  • Properly label and date all products to ensure rotation, safekeeping, and sanitation.
  • Ensure food quality is superior and takes action to correct any irregularities.
  • Ensure kitchen equipment is properly maintained and functioning.
  • Work within the sanitation standards and in compliance of MIC, local, state, and federal regulations, and guidelines.
  • Work with others to ensure the cleanliness and organization of the kitchen.
  • Create, maintain, and facilitate a positive work environment; promotes positive team member relations and reports issues to the appropriate personnel.
  • Other duties as assigned.
