The Kitchen Operations Specialist is the main connection between all Back of House (BOH) departments, closely working with the Chef Team on operational and administrative matters. This role reports to the FP&A Analyst and partners with the Business Planning Analyst and BOH Leadership Team to oversee restaurants’ margins, focusing on BOH labor and food costs. The specialist will oversee BOH ordering, receive and place purchase orders for BOH outlets, and collaborate with the Warehouse Team to ensure kitchen storage organizational systems are maintained effectively, orders are received and distributed correctly, and any missing products are communicated to vendors. Additionally, the role oversees BOH invoices, credits for returns, and submits invoices for processing to the Inventory Control Associate, working with AP if any issues arise. Communication with vendors for special orders, discounts, ingredient sourcing, and scheduling modifications is key. The specialist manages transfers, requisitions, and other BOH in-store product movements, preparing and posting requisitions by verifying specifications and prices. They will oversee monthly inventories, assisting the Chefs’ Team in counting products, entering data into systems, and analyzing gaps. Maintaining order guides, logs, transfer sheets, and SOPs for BOH outlets is also a responsibility. The role supports the Executive Chef and Chefs’ Team with daily BOH operations, enters and maintains recipes into Eataly’s database software, and works with the Corporate Product Team to set up new items and vendors. Finally, the specialist prepares and generates reports to assess price changes, recipe optimization, margin analysis, product consumption, and sales vs. waste contribution, and performs other duties as required or assigned.
