About The Position

The Kitchen Operations Specialist is the main connection between all Back of House (BOH) departments, closely working with the Chef Team on operational and administrative matters. This role partners with the Business Planning Analyst and BOH Leadership Team to oversee restaurants’ margins, focusing on BOH labor and food costs. The specialist is responsible for overseeing BOH ordering, managing invoices and credits, communicating with vendors, and handling product movements within the BOH outlets. Additionally, they manage monthly inventories, maintain operational documents, and support the Executive Chef and Chefs’ Team with daily BOH operations. This role also involves entering and maintaining recipes and new items/vendors in Eataly’s database software and preparing reports for analysis.

Requirements

  • 2+ years experience involving kitchen operations
  • Exceptional organizational skills and meticulous attention to detail
  • Demonstrated flexibility to adapt to a dynamic, ever-changing work environment
  • Excellent verbal and written communication skills
  • Working knowledge of basic computer programs, specifically Microsoft applications

Nice To Haves

  • Culinary experience in professional kitchens, preferred
  • Degree from a culinary arts training program preferred
  • Bilingual in English and Spanish, preferred

Responsibilities

  • Oversee BOH ordering, including receiving and placing purchase orders for BOH outlets.
  • Collaborate with the Warehouse Team to ensure kitchen storage organization, correct order reception and distribution, and communication of missing products to vendors.
  • Oversee BOH invoices and credits for returns, submitting invoices for processing and working with AP if issues arise.
  • Communicate with vendors for special orders, discounts, ingredient sourcing, and scheduling modifications.
  • Manage transfers, requisitions, and other BOH in-store product movements, preparing and posting requisitions by verifying specifications and prices.
  • Oversee monthly inventories, assisting Chefs’ Team in counting products, entering data, and analyzing gaps.
  • Maintain order guides, logs, transfer sheets, and SOPs for BOH outlets.
  • Support Executive Chef and Chefs’ Team with daily BOH operations.
  • Enter and maintain recipes into Eataly’s database software.
  • Work with Corporate Product Team to set up new items and vendors for Eataly’s database software.
  • Prepare and generate reports to assess price changes, recipe optimization, margin analysis, product consumption, and sales vs. waste contribution.
  • Perform other duties as required or assigned.
