About The Position

Kalahari Resorts & Conventions is seeking a Garde Manger to support the Chef in kitchen operations. The role prepares and presents high-quality cold dishes, including salads, appetizers, charcuteries, sandwiches, cold sauces, and desserts as assigned. Food must be prepared according to recipes, presentation standards, and food safety regulations, while the workstation is kept clean and organized. The Garde Manger helps lead, support, and inspire associates while contributing to an exceptional guest experience and a collaborative, efficient kitchen environment. The role may involve leading a team in bulk production of cold foods and presenting attractive plates and platters.

Requirements

At least 1 year of experience in a high-volume production kitchen is preferred.
Knowledge of food preparation techniques and knife skills.
Understanding of food safety and sanitation standards.
Ability to work efficiently in a fast-paced environment.
Strong attention to detail and presentation.
Ability to stand for extended periods and lift up to 50 lbs.
Flexible availability, including evenings, weekends, and holidays.

Responsibilities

Lead a team in bulk production of cold foods and prepare attractive plates and platters when required.
Follow recipes, production schedules, and plating standards.
Monitor food temperatures and store food at safe temperatures.
Ensure food items are properly labeled and stored.
Assist with inventory and ordering, and minimize food waste.
Assist the Main Kitchen with additional production as needed.
Maintain a clean and organized workstation.
