About The Position

The Food Court Outlet Lead Cook is responsible for maintaining the operation of all FC outlets food lines in an efficient manner as directed by the chef or Executive Chef.

Requirements

  • Minimum age requirement for this position is 18 years old.
  • Possess or obtain a Food Handlers Card within 30 days of employment.
  • Must have 1-year Line Cook experience in a high-volume kitchen or equivalent combination of education and experience.
  • Ability to communicate clearly and effectively in English, verbally, in writing or by other acceptable means.
  • Comply with pre-employment, random and reasonable suspicion alcohol and drug testing.
  • Receive and maintain a valid gaming license from the CTCLUSI Tribal Gaming Commission.
  • Availability to work all shifts including weekends and holidays based on the needs of the department and for special casino events.
  • Must be able to sit, stand and/or walk for up to 8 hours.
  • Must be able to carry, reach, twist, bend and squat frequently.
  • Must regularly lift and /or move up to 50 pounds and occasionally lift and/or move up to 100 pounds with assistance as needed.

Responsibilities

  • Provides direction to Food Court Outlet Cooks in their tasks of daily food preparation.
  • Responsible for ensuring Food Court Outlet Cooks are aware of and practicing all TRCR safety and sanitation procedures and state requirements.
  • Sets up stations and makes sure all menu item ingredients are stocked for the day.
  • Ensures all electrical equipment and stations are clean and sanitized after each use.
  • Maintains all foods correct holding temperatures, their usability and quality throughout each shift by following all F&B procedures and State standards.
  • Advises Chef of any shortages or outages, both verbally and by written report.
  • Notifies Chef of any jobs not completed by the prior shift.
  • Completes written production sheets and establishes a prep list for the following shifts.
  • Responsible for maintaining the cleanliness and organization of the line and designated storage areas.
  • Ensures that all food is handled and cooked properly to ensure guest safety.
  • Closely follows the F&B department health and personal hygiene policy.
  • Other duties as directed by management.
