About The Position

We are looking for an experienced and passionate Food & Beverage Manager to provide excellent customer service and leadership at Coppin's Restaurant and Knowledge Bar & Social Room inside the beautiful Hotel Covington and North by Hotel Covington. Hotel Covington embodies the transformation of a celebrated, century-old building into a modern luxury hotel. As the first of its genre in the market, Hotel Covington appeals to business and leisure travelers accustomed to upscale hotels in primary markets seeking an authentic and locally influenced experience. The hotel draws inspiration from the local culture and cultivates a following through a sense of civic pride and exciting food & beverage along with our addition, North by Hotel Covington. Hotel Covington pulls inspiration from its northern and southern sister cities, but a cohesive mix of styles ultimately lends individuality. A story told through regional and local sourcing, and will become the pulse of Covington and beyond: unique yet comfortable, casual yet refined, and timeless yet evolving.

Requirements

  • Previous restaurant, bar, lounge, hotel or upscale hospitality management experience required.
  • Strong leadership, communication, organization, coaching, and problem-solving skills.
  • Experience using POS systems, scheduling tools, inventory platforms, Microsoft Office, and hospitality communication tools.
  • Ability to lead with professionalism, confidence, urgency, discretion, and a calm guest-focused presence.
  • Excellent knowledge of food, wine, beer, cocktails, current beverage trends, and elevated dining service.
  • Ability to stand and walk for extended periods throughout the shift.
  • Ability to lift, carry, push, or pull items typically required in restaurant and bar operations.
  • Ability to work in a fast-paced environment with frequent movement, guest interaction, and changing priorities.
  • Ability to work around kitchen, bar, dining room, lobby, patio, event, and storage environments as business needs require.

Responsibilities

  • Oversee daily operations for Coppin’s Restaurant & Bar and Knowledge Bar & Social Room, ensuring service standards, cleanliness, organization, presentation, timing, and overall guest experience are consistently maintained.
  • Lead the floor during service by monitoring guest flow, seating efficiency, staffing levels, table timing, bar activity, and operational execution to ensure an efficient and seamless operation.
  • Support opening, shift-change, and closing procedures, including side work, cash handling, shift reporting, manager logs, and end-of-day reconciliation.
  • Ensure all dining rooms, bars, lounges, public areas, and outlet restrooms are maintained to brand standards for cleanliness, functionality, and presentation.
  • Collaborate with all departments and hotel leadership teams to ensure seamless guest experiences, special events, private dining functions, and high-volume service periods.
  • Ensure guests receive prompt, gracious, knowledgeable, and polished hospitality consistent with an upscale boutique hotel environment, proactively resolving concerns and service challenges through effective service recovery.
  • Identify opportunities to enhance guest satisfaction, improve operational efficiency, drive revenue growth, and increase repeat business through service, product, and promotional initiatives.
  • Lead, coach, and support front-of-house team members and supervisors, establishing clear expectations for hospitality, professionalism, accountability, teamwork, pace, and attention to detail.
  • Partner with leadership to recruit, hire, onboard, train, develop, evaluate, and retain high-performing team members.
  • Conduct performance reviews, provide ongoing coaching and feedback, manage disciplinary matters, and identify advancement opportunities.
  • Address attendance, performance, conduct, and service-related concerns in accordance with company policies and Human Resources practices.
  • Conduct pre-shift meetings and maintain accurate operational communication regarding menu changes, service priorities, events, guest notes, maintenance issues, and follow-up items.
  • Maintain manager logs and ensure important operational information is communicated effectively between shifts, departments, and leadership teams.
  • Prepare schedules, coordinate shift assignments and breaks, and manage labor utilization to ensure appropriate staffing levels while controlling labor costs and overtime.
  • Maintain comprehensive knowledge of food and beverage offerings, ingredients, preparation methods, cocktail programs, wine, spirits, beer, non-alcoholic offerings, hotel amenities, promotions, and special events.
  • Ensure food quality, beverage presentation, recipe adherence, service techniques, guest engagement, and responsible alcohol service standards are consistently achieved.
  • Recognize and appropriately address intoxicated, disruptive, or otherwise inappropriate guest behavior in accordance with company policies and legal requirements.
  • Assist with forecasting business levels, revenue expectations, and staffing needs to support operational planning and financial objectives.
  • Manage inventory levels, ordering, receiving, stock rotation, product organization, equipment utilization, and maintenance of appropriate par levels.
  • Ensure the availability and proper use of operating supplies, service equipment, and materials necessary to support daily operations.
  • Ensure compliance with company policies, food safety standards, sanitation requirements, responsible alcohol service regulations, workplace safety procedures, and health department requirements.
  • Ensure workplace incidents, guest injuries, and associate accidents are properly documented, reported, and followed up according to company procedures.
  • Utilize guest feedback, service observations, operational reporting, and performance metrics to identify trends, improve training, and drive consistency across all outlets.
