About The Position

The Expo is the critical link between the kitchen and the dining room. You ensure every plate—especially our signature pizzas—leaves the kitchen accurately, beautifully, and on time.

Previous experience as an Expo or in a similar role.
Experience in a restaurant or food service setting.
Familiarity with Point of Sale (POS) systems.

Responsibilities

Coordinating the Pass with Precision: Your station is the final checkpoint before food hits the table. You organize, inspect, and expedite every dish with speed and accuracy, maintaining a smooth workflow between kitchen and servers.
Ensuring Food Accuracy: Double-check each ticket against the food being plated. Confirm toppings, modifiers (like gluten-free crust or no cheese), side items, and sauces. Verify that every pizza is the right size, crust, and build before calling it out.
Quality Control: Inspect every dish for presentation, temperature, and completeness. A well-made PaPPo’s pizza should look as good as it tastes. Don’t let anything less than excellent leave your line.
Communication Hub: Clearly and respectfully communicate with both line cooks and servers. Call out completed tickets, clarify any order issues, and ensure servers understand any special instructions. You’re the voice of the kitchen.
Pacing and Timing: Maintain the rhythm of service. Monitor ticket times and prioritize orders based on when they were rung in, dine-in vs. takeout, and table readiness. Alert the kitchen if the board is backing up or items need to be fired.
Organizing Orders by Type: Separate and label orders appropriately for dine-in, carryout, and delivery. Ensure carryout pizzas are boxed and labeled correctly, with any special instructions included (e.g., “sauce on the side”).
Supporting Servers: Work closely with servers to make sure food is delivered promptly and correctly. Let them know when items are ready and help troubleshoot missing items or re-fires quickly and calmly.
Maintaining a Clean Line: Keep the expo area clean, organized, and free of clutter. Wipe down surfaces frequently, manage ticket rails, and restock ramekins, garnish items, and expo tools as needed.
Following Food Safety Protocols: Use gloves when handling ready-to-eat food, follow sanitation procedures, and avoid cross-contamination. Hot food hot, cold food cold—your line must always be safe and clean.
End-of-Shift Duties: Clean the expo station thoroughly at the end of each shift. Refill ramekins, organize the station, and communicate any inventory needs or recurring issues to management or the kitchen lead.
Representing the Brand: As the final eyes on the product, you uphold PaPPo’s standards of excellence. Guests may never see you, but your attention to detail defines their dining experience.
