About The Position
Lucky Fish offers a fully open, beachfront dining experience featuring tropical drinks and tiki bar food in a laid-back setting. The Executive Chef will support the development and rollout of restaurant products, document recipes and procedures, assist with supplier qualification and kitchen training, and improve kitchen production efficiency. The role is based at Lucky Fish II in Dania Beach, Florida.
Responsibilities
- Direct product development from research and development of new items through restaurant rollout.
- Document accurate recipes, procedures, new product specifications, plate costs, and troubleshooting guidelines.
- Assist the purchasing department in qualifying and approving alternate suppliers.
- Assist Operations with developing kitchen training materials and materials for new product rollouts.
- Conduct step-down product and recipe training for District Managers, Chefs, and Sous Chefs across company and franchise operations.
- Maintain a current project list and obtain approval of priorities from the VP of Operations.
- Assist with selecting back-of-house management staff.
- Implement systems to improve kitchen production efficiency.
