About The Position

The Evisceration (EVIS) position involves ensuring birds are properly opened from the back up ventor to the opener, and that the viscera has been removed. This role also requires identifying and addressing various defects. Final sorters assess every fourth bird for fecal and other defects. Depending on rotation, responsibilities may include using a knife to remove drums with synovitis and major bruising, and wings with bruising and other defects. Individuals on the maestro stand must be sorter certified. Those using scissors on the back up ventor/opener do not need to be sorter certified. All personnel from the maestro down the line must be sorter certified.

Requirements

  • Must be sorter certified or willing to become sorter certified.
  • Ability to work on a line with a speed of 155.
  • Comfortable handling bird weights from 9 1/2 pounds to 11 1/2 pounds.
  • Proficiency in using a knife for specific tasks (depending on rotation).
  • All personnel from the maestro down on the line must be sorter certified.
