About The Position

The University of Central Florida (UCF) in Orlando, Florida, is seeking a Director, Performance Nutrition for UCF Athletics. This role is responsible for the administration, organization, and supervision of a progressive performance nutrition department, overseeing meal operations and catering to support the dietary and hydration needs of 16 NCAA Division I sports and over 450 student-athletes. The position operates within UCF, Conference, and NCAA rules and regulations.

Requirements

  • Master's degree in Nutrition/Dietetics, Food Sciences, Registered Dietitian, or a closely related field and two (2) years of related experience; OR a Bachelor's degree in Nutrition/Dietetics, Food Sciences, Registered Dietitian, or a closely related field and four (4) years of related experience.
  • Accreditation as a Registered Dietitian (RD) through the Commission on Dietetic Registration.
  • License/certification eligible in the State of Florida (ANSI-Conference for Food Protection).
  • Ability to stand/walk for extended periods of time.
  • Commitment to integrity and character, sharing a commitment for customer service.
  • Knowledge of and compliance with NCAA, Conference, and institutional rules as they apply to the UCF Athletics program.

Responsibilities

  • Research best practices and protocols for a full-service training table and multiple fueling stations (on/off campus), and oversee daily menu/catering for constituents in terms of food quantity and quality.
  • Collaborate with internal and campus entities for continuing education and counsel of student-athletes on optimal nutrition and hydration practices to support health and performance.
  • Educate and counsel coaches and student-athletes on the appropriate legal/NCAA-compliant use of dietary supplements, herbal supplements, and performance-enhancing substances. This includes regular evaluation of NCAA-compliant products and identification of restricted/banned substances per governing bodies (NCAA, WADA, US Anti-Doping Agency).
  • Collaborate with coaching staffs and sports performance coaches to analyze energy needs/utilization for each sport and develop individualized nutrition plans (including fueling stations) to help student-athletes achieve dietary goals.
  • Collaborate with sports medicine staff on medical nutrition therapy for managing medical conditions/diseases (sport and non-sport related).
  • Collaborate with sports performance and sports medicine staffs in assessing and analyzing body composition to track progress and re-evaluate nutrition interventions.
  • Collaborate with the sports medicine team on education and programming for medical and psychological conditions related to body image and eating disorders.
  • Oversee the meal card program and report on meal frequency and attendance of student-athletes related to their nutritional needs.
  • Manage relationships with food providers and vendors, ensuring student-athletes receive adequate nutritional ingredients/products (food, fluid, supplements) to maximize health and wellness. Develop a menu labeling system with complete nutritional analysis of each food item.
  • Oversee the sports nutrition budget, including procurement and payment for nutritional supplements, student support, and stocking/inventory/organization/cleaning of fueling stations.
