About The Position

The University of Central Florida (UCF) in Orlando, Florida, is seeking a Director, Performance Nutrition for UCF Athletics. This role, reporting to the Deputy A.D., Athlete Development and Leadership / SWA, is responsible for administering, organizing, and supervising a progressive performance nutrition department. The position oversees meal operations and catering to meet the dietary and hydration needs of 16 NCAA Division I sports and over 450 student-athletes, all while adhering to UCF, Conference, and NCAA rules and regulations.

Requirements

  • Master's degree in Nutrition/Dietetics, Food Sciences, Registered Dietitian or a closely related field and two (2) years of related experience, OR a bachelor's degree in Nutrition/Dietetics, Food Sciences, Registered Dietitian or closely related field and four (4) years of related experience.
  • Accreditation as a Registered Dietitian (RD) through the Commission on Dietetic Registration.
  • License/certification eligible in the State of Florida (ANSI-Conference for Food Protection).
  • Integrity and character, commitment to customer service.
  • Knowledge of and compliance with NCAA, Conference, and institutional rules.

Responsibilities

  • Research best practices and protocols for operating a full-service training table and multiple fueling stations on and off campus, including oversight of daily menu and catering for quality and quantity.
  • Collaborate with internal and campus entities to provide continuing education and counsel to student-athletes on optimal nutrition and hydration for health and performance.
  • Educate and counsel coaches and student-athletes on the legal and NCAA-compliant use of dietary supplements, herbal supplements, and performance-enhancing substances, including regular evaluation of NCAA-compliant products and identification of restricted/banned substances.
  • Analyze energy needs and utilization for each sport in collaboration with coaching and sports performance staffs, and develop individualized nutrition plans to help student-athletes achieve their goals.
  • Collaborate with sports medicine staff on medical nutrition therapy for managing medical conditions (sport and non-sport related).
  • Assess and analyze body composition with sports performance and sports medicine staffs to track progress and re-evaluate nutrition interventions.
  • Collaborate with the sports medicine team on education and programming for medical and psychological conditions related to body image and eating disorders.
  • Oversee the meal card program and report on meal frequency and attendance of student-athletes.
  • Manage relationships with food providers and vendors to ensure student-athletes receive adequate nutritional ingredients and products, and develop a menu labeling system with nutritional analysis.
  • Oversee the sports nutrition budget, including procurement and payment for nutritional supplements, student support, and stocking/inventory/organization/cleaning of fueling stations.
