About The Position

The Director of Food + Beverage will oversee all aspects of the Food and Beverage divisions, ensuring maximum profitability and adherence to the hotel's philosophy regarding hiring, associate relations, supervision, and discipline. This role involves developing policies and operating budgets, managing department heads and associates, and acting as Manager on Duty when required.

Requirements

  • Reading, writing, and oral proficiency in the English language
  • The ability to follow payroll and essential sign-out procedures
  • The ability to offer any assistance possible to guests
  • The ability to respond appropriately to any hotel emergency or safety situation
  • The ability to perform other tasks or projects assigned by hotel management and staff
  • Comply with TIHTC work rules and standards per the associate handbook and management's direction
  • Work harmoniously and professionally with co-workers and management
  • Four-year college degree in Hotel Management
  • Minimum of 3 years progressive experience in the management of deluxe property
  • Prior background in catering and other F&B outlets
  • Thorough knowledge of first-class food and beverage operations
  • Thorough understanding of food and beverage cost controls
  • Thorough knowledge of imported and domestic wines, alcoholic beverages, and mixers
  • Thorough knowledge of all aspects of service
  • Exceptional verbal communication skills to negotiate and persuade staff and guests to achieve results beneficial to the Hotel
  • Ability to maintain excellent relations with Hotel staff

  • Tips/BASSET certification preferred
  • ServSafe City of Chicago certification preferred

Responsibilities

  • Monitor productivity of all Food and Beverage divisions
  • Generate financial statements and reports
  • Select and supervise Food and Beverage department heads and associates
  • Design and develop division policies and operating budgets including, but not limited to, staffing forecasts and payroll costs
  • Maximize profitability within the division
  • Establish and implement objectives for the Food and Beverage department
  • Handle guest complaints
  • Ensure that the hotel's philosophy concerning hiring, associate relations, supervision, and discipline are met
  • Train, motivate, evaluate, mentor, and direct associates and managers to meet desired ends
  • Supervise department meetings and attend general or executive meetings as required
  • Act as Manager on Duty (MOD)
