The Director of Dining Services is responsible for organizing, planning, directing, controlling and supervising functions and personnel within the dining services department to ensure the provision of quality food service and nutritional care. This role involves collecting data for nutritional assessment, completing MDS, providing dietary approaches for care plans, and visiting residents regarding menus and food preferences. The Director also monitors resident progress, develops and maintains the Dietary Information System, processes diet orders, and ensures operations conform to nutritional standards and regulations. Key responsibilities include managing food inventory, ensuring proper food preparation and quality, monitoring portion control and waste, coordinating dining room service, and maintaining a positive dining atmosphere. The Director is also responsible for staff management, including ensuring proper staffing, monitoring performance, setting objectives, and adhering to HR guidelines. This role requires effective communication with residents, families, and staff, as well as participation in meetings and committees. The Director must also manage the department budget, handle unusual occurrences, and ensure adherence to safety and security protocols, particularly in the Dementia Care Unit. On-call duties are also required.
