The Culinary Cook IV is responsible for maintaining, setting up, producing, and controlling the quality of all food items prepared at their assigned restaurant station. This includes meats, vegetables, potato dishes, bread products, and more. The role requires preparing all foods suitable for cooking according to standard recipes to ensure product consistency for guests. Key duties involve visually inspecting and selecting the highest quality food items, checking and controlling proper storage and portion control (especially for high-cost items), and maintaining clean and sanitary working areas in compliance with Department of Health regulations. The cook must also ensure all equipment is clean and in proper working order, prepare requisition forms for supplies, and utilize basic math and reading skills to follow recipes and understand measurements and portion sizes. A fundamental knowledge of line cooking and sanitation standards is essential.
