We're on the lookout for a dedicated individual to join our team and play a crucial role in training and supervising incarcerated individuals in meal production, safe food handling, and clean-up in a secure and supportive environment.

Requirements

  • Two years of full-time work experience in mass food production in a commercial, military, hospital, or institutional food services setting.
  • A total of two years of education and/or full-time experience (as described in number one), where thirty semester hours of accredited college or university coursework in dietetics, nutrition, food management or a closely related equals one year of full-time experience.
  • Current, continuous experience in the state executive branch that includes one year of full-time work as a Cook 1, Cook 2, or Baker.
  • Within a period of time after hire, as determined by the appointing authority, employees in this class may be required to obtain a Commercial Driver’s License (CDL) and endorsements.

Responsibilities

  • Lead a dynamic team of 35 incarcerated individuals in the bakery, kitchen, and dining hall areas.
  • Ensure compliance with health and safety codes, elevating food handling, cooking, and serving techniques.
  • Serve meals with precision, following schedules, policies, and procedures.
  • Manage inventory seamlessly, from ordering to issuing supplies for meal production.
  • Weigh and measure ingredients daily for culinary excellence.
  • Deliver food and supplies to alternate serving locations.
  • Monitor and reward positive conduct, fostering a responsible and respectful environment.
  • Communicate professionally with incarcerated individuals and staff.
