About The Position

This position involves supervising and completing food preparation in a correctional facility, ensuring compliance with all relevant policies, procedures, and regulations. The role requires knowledge of security protocols to maintain a safe environment for offenders, staff, and the public. The coordinator will instruct and direct offender workers in various aspects of food service operations, monitor their performance, and document their work habits for evaluations.

Requirements

  • Two years of full-time work experience in mass food production in a commercial, military, hospital, or institutional food services setting.
  • A total of two years of education and/or full-time experience, where thirty semester hours of accredited college or university coursework in dietetics, nutrition, food management or a closely related field equals one year of full-time experience.
  • Current, continuous experience in the state executive branch that includes one year of full-time work as a Cook 1, Cook 2, or Baker.
  • Knowledge of security to ensure a safe environment for offenders, staff and the public.
  • Thorough knowledge of fire drills, disaster plans and disturbance control procedures.
  • Ability to account for and appropriately lock all controlled items, including knives and utensils.
  • Ability to keep doors secured and follow proper key control procedures.
  • Ability to be alert to any security problems that might occur in Dietary Services.
  • Ability to implement disciplinary action as disruption activities may dictate.
  • Ability to complete daily offender counts, area searches, and clothed offender pat searches.
  • Ability to instruct and direct offender workers in all phases of food production, service, ware-washing, and sanitation.
  • Ability to monitor offender worker work habits and behavior.
  • Ability to demonstrate correct food preparation, equipment use and sanitation methods.
  • Ability to model appropriate social and work behavior.
  • Ability to monitor and document work habits and behavior for completion of work evaluations and job allowance calculations.

Nice To Haves

  • Obtain a Commercial Driver’s License (CDL) and endorsements within a period of time after hire, as determined by the appointing authority.

Responsibilities

  • Complete and supervise the completion of food preparation using pre-weighed ingredients, recipes, and daily production schedules.
  • Prepare medically ordered diets and special tray preparations.
  • Ensure all food preparation, serving, and cleanup comply with Iowa Medical and Classification Center policies, Dietary Services procedures, and Federal, State, and local regulations.
  • Deliver hot/cold food transport carts to living units.
  • Instruct and direct offender workers in food production, service, ware-washing, and sanitation.
  • Monitor offender worker habits, demonstrate correct food preparation, equipment use, and sanitation methods.
  • Model appropriate social and work behavior for offender workers.
  • Monitor and document work habits and behavior for completion of work evaluations and job allowance calculations.
  • Ensure a safe environment by knowing fire drills, disaster plans, and disturbance control procedures.
