About The Position

Freehand Hospitality is seeking a Cook for Peacock Wine Bar, an intimate and cozy wine bar located in Halifax’s Queen’s Marque district. Peacock Wine Bar offers an evolving list of 90+ wine labels and seasonal, tapas-style plates made fresh in-house with an emphasis on quality ingredients and global influences. The Cook will work closely and collaborate with the team, pushing boundaries to keep the dining experience fresh and exciting. The role involves performing delegated tasks from the Sous Chef, Chef, and/or General Manager, daily food preparation according to standards, following recipes and presentation specifications, maintaining a prep list, adhering to the FIFO method, assisting with food inventory and control, and properly receiving and storing delivered items. The Cook will also be responsible for cleaning food prep areas, equipment, and utensils, and strictly adhering to sanitation, food safety, hygiene, WHMIS, and MSDS guidelines. Other similar and related duties as required will also be part of the role.

Requirements

  • 2-3 years cooking experience in a fast-paced, high performing restaurant
  • Experience with high-end, Instagram able plating and be highly adaptable
  • Strength in modern cooking techniques
  • Experience with elevated and unique ingredients
  • Experience with food ordering and inventories
  • Professional cooking and knife handling skills
  • Can spend 100% of the time standing

Nice To Haves

  • Culinary diploma/degree is an asset

Responsibilities

  • Perform delegated tasks from Sous Chef, Chef and/or General Manager
  • Day to day food preparation of the restaurant according to standards
  • Follow recipes, portion controls and presentation specification as set by the restaurant
  • Maintain a prep list of station duties
  • Follow the FIFO method to maximize freshness
  • Assist in food inventory and control
  • Assist in properly receiving and storing delivered items
  • Clean food prep areas, equipment, utensils and strictly adhere to sanitation, food safety, and hygiene guidelines
  • Strictly adhere to WHMIS and MSDS guidelines
  • Perform other similar and related duties as required from time to time
