About The Position

This role is responsible for making cheese from raw milk. The operator will load milk into cook vats, add ingredients to meet customer specifications, and monitor the cheese-making process by taking vat samples and pH readings. Accurate record-keeping of ingredient usages, times, and pH readings on the Make Sheet is essential. The operator will also pump whey and cheese to other operators and be responsible for washing and sanitizing the cook vats. This position requires adherence to safety regulations, GMP, and other corporate policies. The role also involves attending required training sessions.

Requirements

  • High School Diploma or GED required
  • Ability to interpret safety rules, operating and maintenance instructions, procedure manuals and job safety analysis
  • Basic computer skills
  • Ability to add, subtract, multiply and divide, using whole numbers, common fractions, and decimals
  • Ability to compute rate, ratio, and percentage
  • Perform work independently as required
  • Perform necessary routine cleaning and preventative maintenance
  • Knowledge in Excel
  • Knowledge in RS view
  • Knowledge in SAP
  • Knowledge with machines, tools, equipment and Lock out Tag out
  • Must be able to read, write and speak English

Responsibilities

  • Load milk into cook vats
  • Add ingredients to make cheese to customer specifications
  • Take vat samples and pH readings
  • Record ingredient usages
  • Record times, usages, and pH readings on Make Sheet
  • Pump whey pre-draws to Separator operator
  • Pump cheese and Whey to EFV operator
  • Wash and Sanitize cook Vats
  • Maintain safe working conditions for employees and compliance with all state and federal regulations regarding health and safety issues
  • Dedicate effort to safety as we expect every employee to leave work in the same condition as they arrive
  • Follow all DFA good manufacturing practices (GMP) and work in a manner consistent with all corporate regulatory, food safety, quality, and sanitation requirements
  • Exhibit the values and ethics of Dairy Farmers of America through honesty, discretion, and sound judgment
  • Adhere to all DFA Quality, Safety and GMP policies and procedures and report any nonconformity
  • Attend required training, including but not limited to, Safety, GMP, Hazard Analysis and Critical Control Point (HACCP), and Safe Quality Foods (SQF)
