About The Position

Join our Commissary team as an Cook / Butcher and play a key role in preparing fresh, high-quality meals in our Bushwick, Brooklyn kitchen. Proper Food launched in San Francisco in 2014 and has rapidly grown to 16 locations in San Francisco and the South Bay earning accolades from customers, food critics, and local media. Now, we are embarking on our next chapter - bringing our fresh, honest fare to NYC and redefining ‘fast food’ in a way that appeals to the food-savvy and time-starved.

Requirements

  • 1+ year cooking and butchering experience in a high volume kitchen environment
  • Comfortable with physical work, lifting, pulling, carrying 50+ lbs, and climbing ladders
  • Able to stand, walk, bend, and stay active throughout the shift
  • Reliable, detail-oriented, and able to follow a daily task list
  • Able to read, write, and do basic math
  • Available consistently to be on time for early morning shifts in Bushwick, Brooklyn
  • Basic knowledge of knife skills and kitchen equipment
  • Ability to work efficiently in a fast-paced, high-volume kitchen

Responsibilities

  • Receives deliveries of meat, fish or other product and inspects them to ensure that they adhere to the highest quality standards and are not expired.
  • Prepares meat to be ready for cooking using a variety of actions, including boning, tying, grinding, cutting, and trimming.
  • Rotates products to reduce the chance of any meat spoiling to reduce waste and loss of profits.
  • Maintains and cleans the prep areas to reduce the risk of food contamination and adhere to food safety guidelines.
  • Supports hot line operations as needed, including assisting with prep and cooking, ensuring consistency and quality of prepared food items.
  • Works in both butcher and kitchen stations based on business needs, demonstrating flexibility and the ability to transition between raw preparation and hot food execution.
  • Works efficiently with kitchen team members and complies with company procedures and food safety standards.
  • Maintains a positive and professional approach with coworkers.
  • Reports to each scheduled shift on time, in uniform, and ready to work.
  • Assists other stations or areas of the kitchen when requested by management.
  • Is quick, diligent, and willing to improve.
