About The Position
The Commissary Manager supports food operations at Detroit Metropolitan Wayne County Airport (DTW). This is a hands-on leadership role in a high-volume production environment and unionized workplace. The manager oversees central kitchen and commissary operations that supply multiple airport restaurant locations, ensuring food quality and safety while supporting efficient teams and strong operational and financial performance.
Requirements
- Minimum of 2 years of post-secondary education.
- Minimum of 3 years of restaurant or foodservice management experience with direct P&L responsibility.
- Experience supporting multi-unit or high-volume food production environments.
- Strong computer literacy, including MS Office.
- Ability to partner effectively with executives, vendors, union representatives, and hourly teams.
- Analytical mindset focused on continuous improvement.
Nice To Haves
- Bachelor’s degree preferred.
- Experience leading teams in a unionized environment strongly preferred.
- Culinary production background strongly preferred.
Responsibilities
- Oversee purchasing, high-volume food production, storage, and delivery logistics for multiple airport restaurant locations.
- Ensure adherence to recipes, portion control, and company, brand partner, and food safety specifications.
- Manage food and labor costs, inventory levels, and waste reduction.
- Ensure accurate and timely delivery of products and ingredients to airport restaurants.
- Recruit, train, schedule, and coach commissary culinary and warehouse teams in alignment with collective agreements.
- Work with vendors and service contractors to meet specifications, service levels, and quality expectations.
- Oversee inventory management, scheduling, payroll processes, and compliance with health, safety, sanitation, and labor standards.
- Resolve day-to-day operational issues and escalate complex challenges as appropriate.
