About The Position

Laguna Development Corporation is seeking a passionate and experienced Chef de Cuisine to lead culinary operations in our premier food & beverage environment at the Route 66 Casino. This role is ideal for a skilled culinary professional who thrives on creativity, leadership, and excellence in execution. You will oversee kitchen operations, ensure adherence to health and safety standards, manage food and labor costs, and guide your team in delivering consistently high-quality dishes. The Chef de Cuisine is also responsible for staff development, scheduling, inventory management, and maintaining the highest standards of sanitation and guest service.

Requirements

  • Bachelor’s degree (or equivalent experience)
  • 5+ years of food production management
  • Strong background in cost control and culinary leadership
  • Serv-Safe certification
  • Proficiency in kitchen operations
  • Team supervision
  • Basic computer skills (Word, Excel, Outlook)
  • Ability to pass a pre-employment drug/alcohol screening
  • Maintain a valid New Mexico driver’s license
