About The Position

Chartwells Higher Education is seeking a Campus Executive Chef for Eastern Michigan University in Ypsilanti, Michigan. The chef will be the lead culinarian for dining programs and catering, overseeing menu development and preparation and bringing creativity and precision to campus dining. The role also involves managing budgets and food costs, supporting client and customer satisfaction, and developing employees. The position offers the opportunity to contribute to campus dining experiences and grow professionally within Chartwells.

Requirements

Associate of Science degree or equivalent experience.
Five or more years of progressive culinary or kitchen management experience, depending on formal degree or training.
Experience in high-volume, hands-on foodservice operations.
Computer experience.
ServSafe® certification.

Responsibilities

Plan regular and modified menus according to established guidelines, standardized recipes, and presentation standards.
Complete and implement daily production worksheets and waste log sheets.
Supervise and mentor chefs, cooks, and other team members in food preparation, safe handling, equipment operation, and sanitation practices.
Ensure culinary standards are implemented, including recipe compliance and food quality.
Manage food and non-food supply inventory in accordance with guidelines and ensure products are available when needed.
Follow federal, state, and local health and sanitation regulations and department procedures, as evidenced by local health department and third-party audits.
Forecast annual food and labor costs and monitor actual financial results.
Develop strong client relationships, align programs with client objectives, and support satisfaction and retention.
Perform other duties as assigned to support dining service operations.
