This position involves trimming meats such as beef flats and top round according to specific requirements using manual or electric knives. The operator will be responsible for operating various equipment including tumblers, injectors, scales, machine lifts, and pallet jacks. Tasks also include setting up and breaking down equipment, mixing brines for injected products, and maintaining equipment cleanliness in compliance with Good Manufacturing Practices (GMPs). Additionally, the role requires maintaining accurate documentation (run sheets, sanitation reports, HACCP reports) to adhere to USDA and GMP regulations, and moving racks weighing over 1300 pounds. Other duties as assigned.
