About The Position

Mamani, a new 1 Michelin Star restaurant from FLHO, offers French cuisine with an Italian accent from Executive Chef Christophe De Lellis. The restaurant emphasizes approachable cooking, simplicity, clarity of flavor, and ingredient excellence, inspired by the founders' French-born grandmother, "Mamani." Chef De Lellis also draws inspiration from his Italian grandparents. Mamani is the flagship restaurant for the new Quad development in Uptown. The restaurant is committed to providing opportunities for learning, growth, and development within a team focused on genuine hospitality, teamwork, and mutual support. The bar program is an extension of this commitment, focusing on precision, hospitality, and an intimate knowledge of spirits, champagne, and wine. The role of bartender is considered highly visible and consequential, requiring more than just drink execution to include an understanding of the guest experience.

Requirements

  • Minimum 3 years of bartending experience in a fine dining or upscale environment
  • Demonstrated mastery of classic and contemporary cocktail technique
  • Working knowledge of spirits, classic cocktails and wine
  • Understanding of fine dining service standards, steps of service, and guest etiquette
  • Ability to read a room and calibrate presence, pace, and conversation accordingly
  • Professional presentation and composure under pressure
  • Strong communication skills and a collaborative approach to teamwork
  • TABC certification required (or ability to obtain prior to start date)
  • Food handler's certification required (or ability to obtain prior to start date)

Responsibilities

  • Execute all cocktail, spirit, and beverage service to the standards of a Michelin-starred establishment
  • Maintain complete command of the full bar menu, seasonal cocktails, and spirit selection
  • Engage guests with confidence, warmth, and the appropriate level of discretion
  • Collaborate with the sommelier team on wine, champagne, and beverage pairings
  • Manage pre-service bar setup, mise en place, and end-of-service breakdown and cleaning
  • Monitor inventory, communicate needs to management, and assist with ordering
  • Uphold cleanliness, organization, and consistency behind the bar at all times
  • Maintain awareness of all guests at the bar — their pace, their needs, and their experience
  • Support the broader front-of-house team during service as required
  • Participate in ongoing training, menu tastings, and team education sessions
