About The Position

This role is responsible for supporting the Director of Food and Beverage in all aspects of F&B quality, cost control, and completing inventories. The Assistant Food & Beverage Manager will respond to inquiries regarding the financial performance of the F&B department in the absence of the F&B Manager. This position will monitor and ensure that operating procedures are met consistently, communicate effectively with front and back of house management and staff, and oversee the flow of service across various outlets including the gaming floor, property bars, entertainment venues, restaurant outlets, and special events. The role provides day-to-day leadership direction to the F&B hourly staff, demonstrates the ability to perform duties of all bars, service wells, and restaurants, and works closely with managers to monitor and control labor within the department. Maintaining adequate coverage in F&B outlets based on business demands is also a key responsibility. Additionally, the Assistant Food & Beverage Manager will assist with hiring, training, evaluation, and corrective counseling of F&B team members, ensuring adherence to recipes, measurements, quantities, and approved standards for all food items. This role also involves confirming that opening and closing checklists are followed, products are stored and secured, and inspecting serving areas for safe, sanitary handling practices. Maintaining a solid knowledge of F&B products, ensuring proper rotation, and promptly resolving equipment malfunctions are crucial. The position requires ensuring all F&B team members use correct equipment and cleaning supplies according to SDS sheets and departmental standards. Flexibility in working various shifts is necessary to ensure presence and coverage based on business demands. The role involves immediately reporting any concerns or opportunities to the Director of Food & Beverage and providing exceptional service to internal and external guests, ensuring their complete satisfaction through friendly interaction, anticipating needs, and remaining calm and professional in challenging situations. Developing and maintaining positive working relationships, ensuring work activities are completed accurately and efficiently, and working safely are also essential. Regular attendance, maintaining professionalism, assisting with training new team members, adhering to appearance standards, informing management of irregularities, and maintaining a calm demeanor in fast-paced, high-stress situations are expected. Honesty, integrity, and the ability to work independently or as part of a team are required, along with compliance with all legal and company regulations.

Requirements

  • Previous F&B management experience preferred.
  • High school diploma or its equivalent.
  • Must be 21 years of age or older.
  • Must pass all required pre-screening and background checks.
  • Internal candidates must meet the eligibility requirements as provided in the Transfer and Promotion policy.
  • Obtain Alcohol management certification through STAR prior to first day of employment.
  • Ability to work a variety of shifts, this includes day, swing, late-night, weekend, and holiday shifts as scheduled.
  • Must be able to obtain required work cards, and non-gaming registration as required by the local jurisdiction.

  • Inspecting serving areas to ensure observance of safe, sanitary handling practices.
  • Making certain all product(s) is placed and restocked in designated areas.
  • Maintaining a solid knowledge of F&B products and ensuring all products are properly rotated.
  • Immediately researching and resolving any malfunctions of equipment to ensure optimum operation and minimal down time.
  • Ensuring all F&B team members are using all correct equipment, cleaning, and sanitizing products in accordance with all SDS sheets and departmental standards.
  • Demonstrating flexibility by working a variety of shifts to ensure presence and coverage as necessary based on business demands.
  • Immediately reporting any concerns or opportunities to the Director of Food & Beverage.
  • Providing BIG Service to internal and external guests and ensuring their complete satisfaction, inclusive of greeting and interacting with guests in a friendly and enthusiastic manner, anticipating and meeting guest needs and preferences, remaining calm and professional when dealing with guests that are difficult or upset.
  • Developing and maintaining professional, trusting, and positive working relationships with managers, supervisors, staff, coworkers, guests, and vendors.
  • Ensuring that work activities are completed accurately, efficiently, and in a timely manner.
