About The Position

Management & Training Corporation (MTC) operates the Otero County Prison in Chaparral, New Mexico. We provide a safe and secure working environment for our staff while helping those in our custody prepare for success upon release. This position is responsible for the preparation of facility meals in accordance with pre-planned menus, in compliance with MTC and customer directives. The role reports to the supervisor, food services, and directly supervises the cook, kitchen worker, and inmates assigned to the dining room.

Requirements

  • High school diploma or equivalent.
  • Food service training.
  • Two (2) years of food service experience required.
  • Must possess a valid food handler’s permit in the state of New Mexico or the state of Texas.
  • Valid driver's license in the state of New Mexico or the state of Texas with an acceptable driving record required, unless waived by management.
  • Must successfully complete annual in-service training requirements.

Responsibilities

  • Prepare and cook quantity of food required according to menu and number of inmates.
  • Maintain kitchen equipment in orderly workable condition. Ensure work area is safe, clean and sanitary at all times.
  • Prepare foods as directed for special facility functions and visitors.
  • Assist in cleaning kitchen work areas following each meal.
  • Lead and instruct inmates participating in facility culinary arts program.
  • Supervise cooks, inmates and kitchen workers to maintain kitchen in a high state of cleanliness.
  • Maintain the count and control of knives and other controlled kitchen tools. Provide a count of all control items at the beginning and end of each shift.
  • Maintain accountability of staff, inmates and property; adhere to safety practices.
  • Provide custody and security of inmates including observation of detainees, which includes long periods of sitting and standing.
  • Be proficient in all special diets (diabetic, bland, etc.).
  • Maintain accountability of dry goods, freezer goods and all food stock item.
  • Perform other duties as assigned within his/her scope of work as determined by management.
