About The Position

As a Wok Line Cook, you bring the energy and technique of the wok to life in the Din Tai Fung (DTF) kitchen. In this role, you are responsible for preparing wok dishes according to Din Tai Fung’s recipes, cook times, techniques, and plating standards, ensuring each dish delivers the flavor, quality, and consistency our guests expect. You’ll check ingredient quality, cook and finish dishes with the proper garnishes, and maintain a clean, organized wok station throughout service. Responsibilities also include labeling products in compliance with health department regulations and company procedures, and participating in monthly staff and wok department meetings as part of your continued development. Responsibilities

  • Preparing, cooking and plating all the wok line items.
  • Learns all Wok recipes, cook times, and cooking techniques per Din Tai Fung’s procedures
  • Checks the ingredient quality prior to beginning cooking
  • Cooks the ingredients in accordance with Din Tai Fung’s recipes
  • Plates the final product in accordance with Din Tai Fung’s plating guidelines
  • Prepares and cuts garnishes for Wok line items
  • Labels all items in accordance with Health Department regulations and Din Tai Fung procedures
  • Attends monthly staff meetings and Wok meetings
  • Keeps all kitchen areas clean and sanitized
  • Organizes items within the walk-in coolers and freezers
  • Lifts/moves boxes, bags, chairs, and tables (up to 50 pounds)
  • Assists with regular deep cleaning of the kitchen
  • Maintains confidentiality regarding all proprietary information, including but not limited to recipes and Standard Operating Procedures (“SOP’s“).
