About The Position

As a Wok Line Cook, you bring the energy and technique of the wok to life in the Din Tai Fung (DTF) kitchen. In this role, you are responsible for preparing wok dishes according to Din Tai Fung’s recipes, cook times, techniques, and plating standards, ensuring each dish delivers the flavor, quality, and consistency our guests expect. You’ll check ingredient quality, cook and finish dishes with the proper garnishes, and maintain a clean, organized wok station throughout service. Responsibilities also include labeling products in compliance with health department regulations and company procedures, and participating in monthly staff and wok department meetings as part of your continued development.

Responsibilities

  • Preparing wok dishes according to Din Tai Fung’s recipes, cook times, techniques, and plating standards.
  • Ensuring each dish delivers the flavor, quality, and consistency our guests expect.
  • Checking ingredient quality.
  • Cooking and finishing dishes with the proper garnishes.
  • Maintaining a clean, organized wok station throughout service.
  • Labeling products in compliance with health department regulations and company procedures.
  • Participating in monthly staff and wok department meetings.
  • Keeping all kitchen areas clean and sanitized.
  • Organizing items within the walk-in coolers and freezers.
  • Lifting/moving boxes, bags, chairs, and tables (up to 50 pounds).
  • Assisting with regular deep cleaning of the kitchen.
  • Maintaining confidentiality regarding all proprietary information, including but not limited to recipes and Standard Operating Procedures (“SOP’s“).
