Wok Line Cook
About The Position
Wok Line Cooks are responsible for preparing, cooking and plating all the wok line items. This role requires learning all Wok recipes, cook times, and cooking techniques per Din Tai Fung’s procedures, checking ingredient quality, cooking ingredients in accordance with recipes, and plating the final product according to guidelines. The position also involves preparing and cutting garnishes, labeling items according to regulations, and attending staff and Wok meetings. Supporting functions include keeping kitchen areas clean and sanitized, organizing walk-in coolers and freezers, lifting/moving items up to 50 pounds, assisting with deep cleaning, and maintaining confidentiality of proprietary information.

Responsibilities
- Learns all Wok recipes, cook times, and cooking techniques per Din Tai Fung’s procedures
- Checks the ingredient quality prior to beginning cooking
- Cooks the ingredients in accordance with Din Tai Fung’s recipes
- Plates the final product in accordance with Din Tai Fung’s plating guidelines
- Prepares and cuts garnishes for Wok line items
- Labels all items in accordance with Health Department regulations and Din Tai Fung procedures
- Attends monthly staff meetings and Wok meetings
- Keeps all kitchen areas clean and sanitized
- Organizes items within the walk-in coolers and freezers
- Lifts/moves boxes, bags, chairs, and tables (up to 50 pounds)
- Assists with regular deep cleaning of the kitchen
- Maintains confidentiality regarding all proprietary information, including but not limited to recipes and Standard Operating Procedures (“SOP’s“)
