The vat operator is responsible for the cooking, mixing, and monitoring of the cheese make process. This role involves operating the HTST, vats, and CIP system for eight vats simultaneously in a fast-paced environment. The operator must communicate clearly with the Quality Department, Cheese Production Operators, and department management, and react quickly to adjust and troubleshoot equipment to maintain product specifications. Responsibilities include legibly completing the Make Sheet, taking samples of milk, curd, and whey at scheduled times, and understanding cheesemaking procedures such as soft sets, poor acid development, weak curd, and starter problems. The operator must also follow proper agitator RPMs, perform necessary checks and calibrations (including metering starter and thermometers), recognize and communicate potential deviant situations, start up and shut down the HTST, maintain the plant production schedule, and apply lockouts to equipment as required.
