This position involves performing two types of trussing: full body and hocks only. For full body trussing, the process includes wrapping a band around the wing, twisting it, pulling it down, pushing legs into the band, and then flipping the bird onto a conveyor. For trussing hocks only, the process involves pulling the bird off the cone, wrapping the band around the legs twice, and tossing the bird onto the conveyor. The trusser is also responsible for grading birds, removing and discarding any birds with missing body parts or incorrect sizes into a blue tote. Additionally, the role requires performing all duties assigned by the supervisor, following instructions, keeping the work area clean, washing hands at designated stations, adhering to clean room policies, and standing 100% of the time in a cold environment. The job requires excellent eye-hand coordination, full use of both hands/arms, and the ability to use knives/scissors. It also involves ambulating freely, including stepping up onto stands and moving across wet concrete floors.
