This role involves performing two types of trussing: full body and hocks only. For full body trussing, the process includes wrapping a band around the wing, twisting it, pulling the band down, pushing legs into the band, and then flipping the bird off the cone onto a conveyor. For trussing hocks only, the process involves pulling the bird off the cone, wrapping the band around the legs twice, and then tossing the bird onto the conveyor. The trusser is also responsible for grading birds, removing any birds with missing body parts or incorrect sizes, and placing them into a blue tote. The position requires adherence to all assigned duties by the supervisor, maintaining a clean work area, and following handwashing protocols at designated stations. It also necessitates knowledge of and adherence to all clean room policies. The job involves standing 100% of the time in a cold environment, with the ability to ambulate freely, step onto stands, and move across wet concrete floors. The role requires excellent eye-hand coordination, full use of both hands/arms, and the ability to use knives/scissors.
