About The Position
Sakea Gogo is looking for a talented, motivated Sushi Cook to join one of Louisville’s premier sushi bars. This is an incredible opportunity for someone who already has sushi experience and wants to take their skills to the next level while working alongside Chef Deden “Benny” Bandi — @benny_blade and our experienced sushi team. You’ll start with a strong focus on daily sushi prep and roll production during service, while continuing to develop the precision and technique required for nigiri, sashimi, fish fabrication, and ultimately omakase-level sushi preparation.
Requirements
- Previous sushi experience is strongly preferred.
- Strong knife skills

- Comfortable working in a high-volume environment while maintaining the precision expected from an elevated Japanese restaurant.
- Friday and Saturday night availability is mandatory.
Responsibilities
- Complete daily sushi bar prep and maintain exceptional organization and cleanliness
- Work the sushi bar during dinner service, primarily producing maki and specialty rolls
- Learn and develop nigiri, sashimi, fish cutting and advanced sushi techniques
- Maintain extremely high standards for freshness, presentation and consistency
- Work closely with our sushi chefs and culinary leadership
- Support an elevated, fast-paced guest experience
