About The Position

FishBones is a modern seafood, steak & sushi restaurant offering the freshest just caught seafood flown in daily. Our distinctive menu features steaks which are USDA Prime and Choice, aged four to six weeks on the premises and hand-cut daily by our managers. We are always on the lookout for talented, outgoing and experienced people at all levels of foodservice to join our team in Lake Mary. Requirements

  • 3+ years of sushi preparation experience in a professional kitchen.
  • Proficiency in traditional sushi techniques including nigiri, maki, sashimi, and specialty rolls.
  • Advanced knife skills and safe raw fish handling practices.
  • Deep understanding of food safety, sanitation, and temperature control standards for raw proteins.
  • Passion for food quality and the Guest experience.
  • Ability to work calmly and effectively under pressure in a team environment.
  • Strong attention to detail and commitment to consistent presentation standards.
  • Must be able to bend, stoop, lift, reach, push, twist, walk, crouch, and squat.
  • Prolonged periods standing and preparing food.
  • Must be able to lift up to 25 pounds.

Responsibilities

  • Set up and break down sushi station according to restaurant guidelines and Chef specifications.
  • Prepare all sushi and Japanese-inspired menu items with precision, speed, and consistency.
  • Execute recipes, portion controls, and presentation standards as set by the Chef.
  • Source, inspect, and handle raw fish and specialty ingredients with proper food safety protocols.
  • Restock all items as needed throughout the shift.
  • Maintain a clean, organized, and sanitary station at all times.
  • Properly use and maintain all station equipment.
  • Assist with cleaning, sanitation, and organization of kitchen, walk-in coolers, and storage areas.
  • Perform additional responsibilities as requested by the Chef or Kitchen Manager.
