About The Position

This role involves actively contributing to menu development and ensuring the consistent preparation of high-quality food items. The Sushi Chef will communicate effectively with the team, maintain food safety standards, and manage food costs. Responsibilities also include adhering to hotel guidelines for seasonal menus, completing necessary documentation, and ensuring proper inventory management and equipment maintenance.

Requirements

  • Minimum of 5 years in the food service industry; sushi rolling experience required
  • Ability to read, write, and communicate in English
  • Excellent knife skills - experienced in cutting large fish for sashimi & nigiri and prepping vegetables for common sushi rolls & garnish
  • Valid food handler’s license, with sound knowledge of food safety regulations
  • The ability to stand for long periods of time
  • The ability to work under pressure with sound judgment

Responsibilities

  • Actively share ideas, opinions and suggestions to improve the environment and menus
  • Ensure the consistency in the preparation of all food items for à la carte and/or buffet menus according to property recipes and standards
  • Communicate effectively with the rest of the team and thrive for guest feedback
  • Ensure all kitchen colleagues are aware of standards & expectations
  • Maintain and enhance the food products through creative menu development and presentation
  • Adhere to menu engineering program and create seasonal and holiday menus according to hotel guidelines
  • Control outlet food cost, through menu engineering, production efficiencies, and food waste
  • Conduct corrective disciplinary action forms and documentation as needed
  • Completes daily temperature log books and insures FIFO of all received goods.
  • Place work orders for items needing repair
  • Other duties as assigned
