About The Position

This full-time position in the Food and Nutrition Services department at Lexington Medical Center is responsible for overseeing dietary operations, ensuring high-quality food production, maintaining sanitation standards, and supporting team members. The role involves adherence to hospital policies, contributing to customer satisfaction, managing food quality and schedules, and ensuring a safe work environment. The Supervisor will also be involved in training junior staff, assisting management with budget and overtime, and participating in food safety initiatives.

Requirements

  • High school diploma or GED equivalent
  • Four years' experience in a food service environment, which involved the production of food
  • ServSafe Certification
  • Literate in English and able to follow instructions
  • Works under general supervision
  • Relies on experience and judgment to plan and accomplish assigned tasks and goals
  • Ability to operate various cooking equipment, as well as follow recipes and to adjust according to volume
  • Ability to withstand large temperature variances from cooking areas to freezers and coolers
  • Ability to adjust to the needs of the department
  • Desire to achieve high customer service standards
  • Ability to communicate with a wide variety of people including patients, visitors, employees, nursing staff, managers, and hospital staff
  • Ability to step in any area on the At Your Request Line (deli, saute & grill station and assembly line)
  • Understanding of the hospital diets (ground, chopped and puree diets)

Responsibilities

  • Adheres to hospital and departmental policies and procedures, promoting a cooperative work environment and demonstrating commitment to customer service and satisfaction.
  • Contributes to overall positive patient and customer satisfaction by striving to meet the highest service and quality standards.
  • Maintains a 97% or better sanitation rating from the Health Department and a double gold rating from NSF by following sanitation policies and completing daily/weekly cleaning assignments.
  • Monitors the quality of product at stations, ensures recipe compliance and adherence to departmental guidelines, and meets productivity and delivery schedules.
  • Follows all workplace safety and sanitation rules and regulations to maintain a safe work environment.
  • Completes required in-service training, job-specific training, annual Compliance and HIPAA training, and annual TJC/OSHA training, as well as training and testing on various food preparation techniques.
  • Participates in department's performance improvement initiatives, works as a team player, and supports other Food and Nutrition Services departments as requested by management.
  • Minimizes product waste and controls costs by properly utilizing, maintaining, and handling equipment and supplies, and following recipes and portion control guidelines.
  • Plans workday regarding time, equipment usage, and quantities needed to ensure meals are served on time, monitoring food needs and notifying management of adjustments.
  • Prepares food according to departmental policy and procedures using standardized recipes, maintains leftover logs and waste programs, and completes and follows HACCP documentation and guidelines.
  • Assumes the role of Team Leader in their absence, maintaining work area orderliness and sanitation, and ensuring accurate completion of HACCP and brand documentation.
  • Assists the Department Manager and/or Team Leader with leadership within the department, including managing budget responsibility and minimizing overtime, and participates in Culinary Planning meetings and Food Safety Audits.
